112 gr drained (1 can) Canned Tuna in Water
1/2 cup Green lentils
100 gr (1 medium) Cucumber
30 gr (1 small/ a half of 1 medium) Red onion
70 gr ( a half of 1 beg pepper) Yellow Bell Pepper
70 gr ( a half of 1 big pepper) Green bell pepper
25 gr Leafy Salad Mix
2 Clove Buds
1 pinch Ground black pepper
1/4 tsp Sea salt
1 tbsp Flax Seed Oil
1 tpsp Grape Vinegar
3 tbsp Lemon juice

Times when salads were associated with an extremely restrictive diet are happily gone.  That bowl of leaves you had to live on until being able to squeeze into favorite jeans are forgotten forever. Now it’s a celebration of super foods power in a form of utter deliciousness.

Salads are a great option for those who wants to get shredded and limited on carbs. With a creative approach one balanced salad can make a great filling lunch or dinner.  Besides they are so easy and quick to make.

Here is one of my recipes for the foodies wishing to be lean.

Put green lentils in a small pot and cover them with 1 cup of water (ratio is 1:2). Add 2 clove buds into the pot, this little trick will prevent you from having flatulence that a legume can give. Besides, cloves give really nice flavor to green lentils. Cover the pot with a lid, bring to the boil, reduce fire to the minimum, and cook lentils for 20 min.

Meanwhile prepare your veggies for the salad. Chop cucumber, green and yellow pepper, slice red onion.

For the dressing mix together flax seed oil, grape vinegar and freshly squeezed lemon juice. Better do it with a whisker so it gets combined more even.

When lentils are done mix in a pinch of black pepper and salt to them. Always add salt when green lentils are already cooked as it increases cooking time of legumes. It won’t make any difference in taste though.
And don’t forget to remove clove buds, they’ve done their job and won’t taste nice in the salad.

While lentils are hot let’s quickly assemble the salad. Take a big salad bowl, it’s going to be a good, generous portion and you need a space to mix up all the ingredients. Mash tuna with a fork in the bowl. And next… everyone knows what to do, it’s a salad! You throw all the fresh delicious stuff you’ve prepared, enjoying vibrant colors, pour the dressing over and mix it up. Mix it well cause you want to get a bit of everything in your mouth and have it all well dressed.
Super easy. Enjoy right away!
The salad tastes great cold as well so if you’d like to include it into your meal prep routine, go ahead.
