Ingredients

Adjust Servings:
60 gr Red Leaf Lettuce
160gr Tomatoes
130 gr Green beans
60gr Red onion
70 gr Pearl Mozzarella
40 gr Pressed Black Olives
For the dressing:
1 tbsp Extra virgin olive oil
2 tbsp Lemon juice
1 tbsp Red Wine Vinegar

Thinking about what to cook for lunch today? Try this Vegetarian Green Beans Salad recipe!

Cook frozen green beans in a pan for 2 minutes without oil or with a little bit of water if you use fresh ones. Finely slice red onion and mix it with the beans. Put aside.

Slice Tomatoes. Chop black olives getting rid of the bones. Put aside.

For the dressing mix olive oil with red wine vinegar and freshly squeezed lemon juice in a small bowl.

Assemble your salad by layering the  prepared ingredients. Larger dark red leaves of lettuce are going to the bottom, then spread a half of beans with red onion, next are tomato slices, beans and onion again, finally sprinkle the dish with mozzarella, smaller green lettuce leaves and black olives. Drizzle the dressing on top.  Ready.
