1 lt Chicken broth
300 gr White beans dry
170 gr Carrot
200 gr Yellow onion
200 gr Celery
1 tsp Saffron
1 tsp Curry powder
1 pinch Paprika flakes
2 tsp Turmeric
2 Bay leaves
1/2 tsp Sea salt
20 gr Parsley finely chopped for garnish

Spicey Chicken soup with white beans and vegetables

Put presoaked white beans into a pot with chicken broth. Place the pot on heat, bring to the boil, reduce the hit to minimum and let simmer with a lid on for 20 min.

Meanwhile roughly chop carrots and celery, finely chop yellow onion and parsley.

After first 20 min of simmering add carrot and onion to the soup. Simmer for 10 more min. Than add celery, paprika flakes, turmeric, saffron, curry powder and bay leaves. 10 more min simmering and your soup is ready. Take the pot off the heat and add salt at this point.

Serve in bowls with fresh parsley garnish.
