Ingredients

4 Red onion medium
30 gr Arugula
60 gr Goat cheese
1/2 cup Parsley
1 pinch Sea salt
1 pinch Ground black pepper
For the dressing:
2/3 cups Walnuts
1 clove Garlic
2 tbsp Apple cider vinegar
2 tbsp Extra virgin olive oil

Roasted Onion Salad with Arugula, Goat Cheese and Walnut Dressing

Preheat the oven to 200 °C/395° F.

Peel the onions and cut each one crosswise into 3 slices. Place them on a baking sheet  lined with parchment. Drizzle the slices with sesame seeds oil and rub the onions  with your hands to coat evenly. Sprinkle with a big pinch of salt and  black pepper. Roast for 30 minutes, until the onions begin to brown and caramelize.

While the onions cook chop walnuts, parsley, mince fresh garlic and mix them  in a small bowl with olive oil and apple cider vinegar.

To serve, put the arugula and  in a large bowl, crumble goat cheese on top and nestle in the onion slices. Then sprinkle  with the dressing and serve.
