600 gr Skinless Chicken Thighs with Bones
250 gr Mushrooms
270 gr Brocolli Florets
150 gr Carrot
1 tsp Ground cumin
100 gr Red onion
100 gr Fresh Spinach
1/4 tsp Paprika flakes
1/2 tsp Ground black pepper
1 tsp Garlic powder
1 tsp Sea salt

Put chicken thighs into a large pot and cover them with 1,5 liters of water. Cover the pot with the lid, bring water to the boil, reduce the heat and simmer for 10 minutes.

Meanwhile peal and roughly chop your carrot. After 10 minute of poaching chicken add carrot, ground cumin, black pepper and paprika flakes into the pot. Cover with the lid and cook with carrot for 5 more minutes.

In the meantime slice mushrooms and red onion. Add to the soup. Simmer all together for 10 minutes.

Add broccoli florets and boil for 9 minutes. 1 minute before the soup is done add chopped spinach helping yourself with a spatula, garlic powder and sea salt.

When the soup is ready, take the chicken thighs out of the pot, remove the bones and cut each thigh into 4 equal pieces. Therefore you get 3 pieces per portion.

Serve hot in bowls with chicken on top.
