Oatmeal Pie with Spinach and Leek Roses

Preheat your oven to  180 °C (360 °F).

 

In one bowl  mix dry ingredients: oat flour, sea salt, baking soda and ground black pepper.In another bowl beat 1 egg and 1 egg white, add soya milk  and whisk for about 30 seconds. Then add dry ingredients to liquid ones and mix to combine evenly.

Spread  slightly thawed spinach on the bottom of 22 cm silicone baking pan and cover with the batter.  Clean and chop the leek into 2 cm pieces. Place leek pieces into the batter one by one in a circular pattern starting from the center.

Bake the pie for 40-45 minutes. Take the pie out of the oven and let it to cool down completely before taking out of the pen.

Best eaten cold after chilling in the fridge. Makes a great nutritional breakfast or snack. Bon appétit!
