2 big leaves Lettuce

100 gr Green Kohlrabi

1 small Carrot

Directions
Making a change to a clean diet is challenging. Highly processed junk food is in fact a part of our culture. Most of us are raised with fast food and sugary snacks as staples of day-to-day life.
In the pursuit of feeling and looking good we refuse lots of health and body enemies, but still… I bet for everyone there is at least one junk food product/meal obsession that seems to be nearly impossible to overcome.
Definitely constant deprivation is not a great soil for staying motivated and keeping up with the goals. I personally believe that the best diet is the one you can maintain all your life. And by my experience I can say that the only way to stay consistent on your health track is loving what you eat, perceiving food as an opportunity to nourish your body and finding healthy alternatives.
Here is my healthy chicken nuggets recipe. Try them and you will never come back to ”normal” ones.
Preheat your oven to 190 °C / 375 °F.
Beat an egg with allspice, ground cumin and salt, this mixture will work like a glue for outs and thyme. Mix oats with dried thyme and spread it over a big flat plate. First wash a stripe of chicken in the egg mixture then cover with oats and thyme by pressing each side onto the plate. Repeat with the remaining pieces.
Place chicken on a baking tray lined with parchment or aluminium foil and bake for 18-20 min.
If you want your nuggets to be more golden in color, 5 minutes before the’re cooked take nuggets out of the oven and brush it with avocado oil, put them back to get fully done.
While nuggets are in the oven let’s use time and make a dipping sauce and a salad.
For the dipping sauce just mix Greek yogurt with dried mint. Simple and delicious.
For the salad grate a carrot using big teeth of a box grater. Chop radish, thinly slice kohlrabi using a peeler. Shred lettuce leaves into smaller peaces with your hands. For the dressing mix avocado oil with lemon juice.
Time to plate. Place the sauce bowl in the center, put nuggets on one side of the dish and on the other one assemble a salad by layering prepared veggies,drizzle the dressing over the salad and sprinkle black sesames on top.

Cut chicken breast into stripes, try to make pieces relatively similar. Don't worry about that too much though cause you will make them more lookalike at the next step by flattening chicken pieces with a mallet. Try to make each stripe about half centimeter thick. When you're done with the noisy part of the recipe put chicken into a small bowl and cover it with lemon juice. It will break down meat tissues and make breast tender. Leave chicken to marinate for 15 minutes. |
