Ingredients

For the base:
100 gr Dates
160 gr Walnuts
2 tbsp Shredded coconut
For the filling:
400 gr Cashews presoaked for 6 hours
200 ml Coconut milk
3 tbsp Coconut oil
30 gr Cocoa powder
200 gr Dates presoaked for 2 hours in warm water
For the glaze:
100 gr Dark chocolate at least 70% cocoa
80 ml Coconut milk

Blend walnuts, dates and shredded coconut in a food processor or blender. Cover a 22-cm springform pan with parchment and  press sweet mass into the the bottom and sides, spreading evenly. Put the pan into  freezer for 1 hour.

Blend all together presoaked cashews, coconut milk, coconut oil, cocoa powder and dates flesh. Final consistency of the filling should be even and smooth.  Spread the mixture on the base of cheesecake and put again to the freezer for 1 hour.

Break chocolate bar into small pieces. In a pot bring coconut milk to the boil, reduce the heat, add chocolate pieces and stir while chocolate is melting to combine smoothly with coconut milk. Take off the heat when chocolate is melted . Pour the mixture on top of your cheesecake and put it to the freezer overnight.

40 Minutes before serving transfer the cheesecake to refrigerator.  Enjoy!
